FRIED FISH

Fried Fish

Ingredients:
1/2 cup cornmeal
1/2 teaspoon salt
1 teaspoon pepper
Pinch cayenne pepper
4 to 6 fresh fish, bream, mullet, catfish (1/2 pound each), dressed
1/2 cup shortening or lard
1 lemon
Method:
Combine cornmeal, salt, pepper and cayenne pepper in small mixing bowl. Spread onto a sheet of aluminum foil. Dredge fish in cornmeal mixture. Heat shortening in large fry pan. Fry fish untilgolden brown and flaky, about 4 minutes on each side. Remove from pan; drain on paper towels. Serve hot with lemon wedges or juice.
Makes: 4 servings.
